What You’ll Need:
- 1 Cup Legendary Foods Pecan Pie Almond Butter*
- 1 Egg
- 1/2 tsp Baking Soda
- 3 TBS Unsweetened Nut Milk (or milk) of Choice
* You can sub in any other Legendary Foods nut butter flavor or any other nut butter type. Just keep in mind that if you use plain nut butter you will want to add a sweetener to the batter since Legendary Foods nut butters are sweetened already with stevia and erythritol. I would suggest using erythritol or monk fruit, starting with ~1/4 cup and adding more if needed!
Make it more keto by adding a scoop or two of MCT powder (adding MCT oil will make the batter too oily)
Instructions:
- Preheat oven to 350F
- Whisk egg, nut milk, and baking soda in large bowl
- Add nut butter and mix until well combined
- Roll portions into balls and press with palm of hand
- Bake for 8 minutes, use fork to make “thread” design on cookies, and bake for another 7 mins
